Sweet Potato Casserole

ok. so another super yummy recipe from my mother-in-law. who doesn't LOVE a good sweet potato casserole?! i've always wanted a recipe for this but i've been too intimidated (for some strange reason) to make this on my own. i really didn't realize how simple this recipe is & i'm so glad that i tried it. i'll be making it over & over!!

before you get started. you need to cook 4 sweet potatoes at 450 degress for 1 hour. just wash them, poke them with a fork (all over) & wrap each one in foil. then place on a baking sheet. i did this earlier in my day & let them cool. that way when i was ready to start preparing the casserole, it went very quickly. once they have cooled, unwrap them from the foil, cut them in half & spoon out the insides into a large bowl. (you don't want any peeling in the bowl).



once this is done. you're ready to throw it all together!!



Ingredients:

4 sweet potatoes. cooked & mashed.
1 1/2 sticks butter. softened.
1 cup sugar
2 eggs. beaten.
1 tsp vanilla

preheat oven to 325. place potatoes, butter, sugar, eggs, milk & vanilla in a large bowl. mix well.




place the mixture in a greased baking dish.



prepare topping.

Topping Ingredients:

1 cup pecans. chopped
1 cup brown sugar
1/2 cup butter. melted.
1/2 cup flour

combine all ingredients in a bowl & mix well. you may need to break up the brown sugar with a fork or your hands. it will be slightly clumpy, but thats ok!



spread pecan topping over the potato mixture.



Bake at 325 for 25 minutes. How oooey gooey & delish does this look?! its amazing.



i served this with Chicken Stuffing Casserole ( i just posted this recipe, check it out) green bean, biscuits. its a scrumdiddlyumptious meal!
