Salsa Chicken Fajitas

this is a yummy & easy marinade for chicken fajitas. i got the recipe from my mom. it doesn't disappoint & it only has 3 ingredients! whoop!!



Ingredients:

1 cup salsa
1 tsp lemon juice
1/4 cup vegetable oil
(this marinade is enough for 1.5 lbs of chicken breast. i use 3 pieces of chicken)

combine all 3 in a gallon size ziploc baggy. i also add a dash of cumin, garlic salt & black pepper. it gives it a good flavor. make sure everything is mixed well in the baggy. then add your thawed chicken breasts. close baggy & make sure the chicken is fully covered in the marinade. place in the fridge & allow it to sit for a few hours.




remove from the fridge & cook. i use our griddle. i heat it up to about 400. it takes about 7 minutes on each side. as the chicken is cooking i spoon some of the marinade on the top, then flip it & spoon more of the marinade on the other side.




after it is done cooking, allow the chicken to rest for a few minutes. then shred it or cube it. i serve mine up like fajitas. we use tortillas, lettuce, cheese, sour cream, panchos green dressing & tomato. it is really yummy! recently, my hubby fixed his on tortilla chips & created chicken nachos. it was really good. you could also use the chicken in tacos. whatever you like.




i'm telling you its really yummy. it has such a good flavor & i love that its so easy, cheap & quick to throw together. i serve my fajitas with some spanish rice & voila, instant mexican yummy supper! enjoy!
